We love these banana muffins! They make a frequent appearance in our house on Saturday mornings when the bananas purchased the weekend before no longer look so yellow. A few years ago, I made them on a Saturday morning and left them unattended to cool slightly while I took a shower. When I came downstairs, there was only one left in the pan, and Ben was about to embark on the only other remaining muffin. Yes, he ate ten muffins. His sister was genuinely concerned about the digestive effects of eating ten muffins, but Ben proved his stamina by going on to sample everything the Bloomsburg Fair had to offer that very afternoon without a hint of discomfort.
The recipe comes from a cookbook called Muffin Mania, that was given to me at a bridal shower. Sometimes we add chocolate chips, but then I feel it crosses the line into dessert territory, and you may have a twinge of guilt when consuming ten of them in the morning.
Best Ever Banana Muffins
- 3 large ripe bananas
- 3/4 c. white sugar
- 1 egg
- 1/3 c. melted butter
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 1/2 c. all purpose flour
Mash bananas. Add sugar and slightly beaten egg. Add the melted butter. Add the dry ingredients and bake at 375 for 20 minutes. Yields 9 large or 12 medium muffins.
STEVE and Ben should get together. Steve will sometimes says, “oops I ate a dozen cookies.”
As Ben would say with a shrug, “it happens.”
