When Phil left home, his mom made him a cookbook that included this recipe, which has come to be known in our house as “Cornflake Chicken.”


The ranch potato recipe comes from Ben’s Aunt Mary, who revealed after everyone offered rave reviews at a family cookout 15 years ago, that she got it from the back of a ranch dip mix packet.

Admittedly, I don’t remember exactly what the recipe was, but this is what we do without too much thought or precision:
Cut 2-3 pounds of potatoes into 1 inch cubes. In a large bowl, combine ranch powdered dip mix with 1/4 cup of vegetable oil. Add potatoes to bowl and mix to coat potatoes. Bake in 400 degree oven on a sheet pan until potatoes are golden and tender, 20-30 minutes.
