Disclaimer: We are not Polish, and I had never heard of pierogies before moving to Pennsylvania.
This week, we needed something fast, nutritious, and satisfying for supper, so we turned to this recipe:
This pierogie sausage broccoli dish comes together in no time, and (bonus) it was really tasty. Phil is given to making food declarations. This week, his declaration was that all pierogies, henceforth, should be prepared in a manner consistent with potstickers. Think of it as a universal potsticker policy. I’m on board.
Our family is in a crazy-busy phase these days. Ben is settling into life as an adult. I’m settling into in-person instruction. Phil is settling into Covid-Era college life 2.0. (“We know how to do it. We can do it. But I wish we didn’t have to be doing it.”) Sophia is settling into her dream job, teaching Elementary Life Skills through the IU. She loved her previous second grade teaching assignment in Northern Tioga, but when the opportunity arose for her new job, she eagerly pursued it. And me? The momma? I’m pretty happy she’s coming home geographically, with her new apartment only minutes from us, but more than that, her heart is coming home. She has been training her whole life to teach life skills. She has worked for years in the summer special education program for the IU, and growing up with Ben, she has developed a passion and skill for working with children like him. I love talking to her as a colleague, and I’m so proud when I hear her “think like a teacher.”
She has not yet moved into her new digs, so some days she commutes, and some days she stays overnight at our house to avoid the 49 minute (not that anyone’s counting) commute. It is worth noting that she most often stays over when she likes what’s on the menu! The pierogie dish made the cut.
