Ben loves Mexican food, and his favorite component is homemade flour tortillas. This was the first food I ever made by myself, and I made them all the time when I lived on the Hopi Reservation right out of college. The recipe we still use is the one our neighbor gave my mom when we lived in Albuquerque. When I met my husband, he was amazed by how tasty they were and said that he didn’t know a person could make tortillas. I said that I didn’t know you could buy them!
Flour Tortillas
3 c. Flour
1 T. Baking Powder
1 t. Salt
1/4 c. Shortening
1 1/4 c. Warm water
Mix flour, baking powder and salt. With a pastry knife, cut in shortening until pea-sized pieces form (don’t overwork). Add warm water (start with 1 cup and use more if necessary) and stir until dough just adheres together. Form into balls the size of a ping-pong ball. Lightly flour board and rolling pin and roll out dough into thin rounds. Heat a pan over medium high heat and cook tortillas one at a time (a minute or two on each side) until it browns lightly in spots). Keep cooked tortillas warm in clean tea towel.
When I used to help my grandma make them, I used to be disappointed that they weren’t coming out round and she simply stated, “they don’t roll down so don’t worry about it too much.” Looks like fun tho! And nothing better than a fresh tort with some butter on it! Enjoy!!
