This week we had our first Ben’s Day Wednesday guest! We’re not saying your name has to rhyme with Ben, but it doesn’t hurt! Jen has been a family friend for years. We had a great time teaching second grade together, but Ben positively fell in love when he first saw her eat a burger at the Crippled Bear about ten years ago.
Ben’s pick for tonight was meatball subs with roasted peppers and onions. It might have been our best Ben’s Day Wednesday yet!
Since peppers and onions would take awhile, we started with those. Cutting was a team effort. Ben placed them on the pan and added olive oil, salt and pepper. They roasted at 450 degrees until they were done, maybe 30 minutes. Ben turned them over about halfway through.We made the sauce by heating a little olive oil in a skillet, adding a can of tomato sauce and a can of fire-roasted tomatoes. Next, we added a little sugar, garlic powder, onion powder, salt, rosemary, oregano, basil, thyme, red pepper flakes, black pepper, marjoram, and sage. We didn’t measure, but they are listed in order from more to less.Next, we threw in some meatballs from the freezer, stirring until they were covered with sauce. After covering and cooking on medium-low for about half an hour, we tested one to see if they were heated through. We topped the meatballs with a little shredded mozzarella cheese, and baked in a 450 degree oven for 5 minutes to melt the mozzarella.
No Ben’s Day Wednesday is complete without a kitchen dance party! I only regret that I didn’t record their Justin Timberlake performance.
These meatballs, served with roasted onions and peppers on soft sub rolls, along with a seizure (Caesar) salad, made for a delicious meal. We loved them almost as much as we love Jen!
