I won’t lie. When I told Ben what we were cooking with, he said, “Rough!” However, we think we turned it into a win. We are limiting trips to the grocery store these days, so we just used other ingredients we had on hand to create our menu of spaghetti and meatballs with milkshakes.
We used pecorino romano cheese and morita chiles to make chicken meatballs. The cheese was also the star of the cacio e pepe pasta dish. We saved the candy and espresso powder to make some delicious banana milk shakes for dessert. While we didn’t end up with all ingredients in a single dish, we were all about using up stuff we already had.
Ben was so excited about the chicken meatballs that he basically jumped up and down throughout their entire preparation. We didn’t really have a recipe, but we ground up some chicken breasts, and added pecorino romano cheese, corn meal, oil, egg, morita chili sauce, cilantro, lemon zest, and garlic.
