Last weekend, we had the honor of attending Alyssa and Kyle’s wedding. Alyssa took care of Ben after school when she was in college and she now teaches in Philadelphia. What a great celebration of some wonderful people! (My photography skill was the only thing lacking, but it was a beautiful wedding!)
For the nuptials, Ben wore his “birthday suit” (don’t panic, it’s what he calls the red jacket he picked out, purchased himself, and wore for his birthday dinner and special prom.) Just for Ben, Alyssa made sure the dance playlist started with “Uptown Funk.” He literally was on the dance floor from the first song to the last. Alyssa and Kyle? Match made in heaven. Ben and dancing? Same.
What else did we put together last week to good effect?
We cook all the time. All. The. Time. Sometimes I have it in me to document it photographically, and sometimes I don’t. Our steak sandwich and roasted broccoli with salami was a meal worthy of posting.
Steak and Cheese Sandwich

4 tablespoons butter, divided, plus more
1 red pepper, sliced
1 onion, sliced
2 pounds sirloin steak, cut into 1/2 inch strips
1 tablespoon Worcestershire sauce
Montreal steak seasoning
Salt and pepper to taste
6 hoagie rolls, split
Butter, for spreading
Mayonnaise, for spreading
12 slices provolone cheese
Melt butter. Add bell pepper and onion. Sprinkle with salt and pepper. Sauté until tender and remove from skillet.
In same skillet, melt 2 tablespoons butter. Add steak and Worcestershire sauce. Sprinkle with steak seasoning, salt, and pepper to taste. When the steak begins to brown, add vegetables back to skillet and cook a few minutes. Do not overcook steak. It should be pink in the middle.
Meanwhile, cut open hoagie rolls and lay on foil-lined baking sheet. Spread lightly with butter and broil until toasted. Remove from oven and spread mayonnaise on the bottom of each hoagie roll, then add the steak mixture. Top with cheese so meat and bread is covered. Broil until cheese is melted.
Roasted Broccoli with Crispy Salami
(Inspired by Food Network’s Katie Lee)
3 heads broccoli, cut into florets
8 pieces salami, cut into strips
2 shallots, halved lengthwise and sliced thinly
3 tablespoons olive oil
1/4 cup parmesan cheese, grated
Sat and pepper to taste
Heat oven to 425º and line a baking sheet with parchment paper. Stir together all ingredients except cheese, and place on baking sheet. Bake 20 minutes. Remove and stir. Sprinkle cheese on top and bake another 10 minutes.
