For the third time we had to cancel our trip to Virginia this weekend to visit Ben’s grandparents. Dicey weather and a pesky cold that has wiped me out meant that we had to sit this Friday out. Ben felt that nachos and family movie night were an appropriate salve to the canceled-plan wound. I did not have the wherewithal to disagree.
This time we each built our own pile of nachos with blue corn chips, black beans, seasoned ground beef, onions, and pepper jack cheese on a parchment lined baking sheet, then baked them until the cheese melted. These were easy to slide off onto our own plates before adding pico de gallo, salsa, sour cream, lettuce, and a truckload of guacamole.We always struggle to find a movie we can all enjoy. Ben typically likes dogs, fart jokes, and only wants to watch movies he has already seen 437 times. We’re fine with dog movies, can do without the fart jokes, and cannot watch Beethoven or Air Bud one. more. time. We got it just right this time with Vicky and her Mystery.
