Yesterday, we started our snow day with breakfast stuffed peppers.With an egg on top these were great! Yes, the yolk is overcooked. Ben finds a juicy yolk off-putting and there was a lost key crisis at the moment the eggs should have been pulled from the pan. Worked out just right for Ben.Lunch for Ben was leftover sausage kale lentil soup, a chicken patty, chips, and crackers with cheese dip. Chips and crackers seem redundant, but you know Ben.Good thing he fueled up because he then went out to shovel the driveway and sidewalk. At one point, I lost sight of him, but it was only because he was shoveling the neighbor’s walk. It was really cold so I was impressed that he stuck with it for about an hour. I have a cold, so I mostly sat around and stared all day. I guess I was too tired to take many pictures of the beautiful day. Keeping Ben in food all day is kind of a full time job!Luckily, when Phil came home from work he stepped up and made a great dinner of chicken sate with rice and kale Caesar salad. What the apple cake lacked in elevation, it made up for in taste. Yum!
