This is our kind of meal – easy and delicious. I don’t think you could mess this up if you tried! We are a medium rare family, and I can’t guarantee results if you like steak well done, so on second thought, I guess you can mess it up. This time, Ben and I decided to upgrade this sandwich by making our own fresh bread after school. Once it was cool enough to slice, we slathered it with triple creme Brie and piled on thin slices of steak that we had grilled the day before. We like to top it with caramelized onions.
If you are thinking that baking fresh bread is ridiculous on a weekday, it’s easier than you think if you plan ahead. The day before you want to bake it, stir together: 3 cups of flour, 2 teaspoons of salt, 1/2 teaspoon yeast and 1 1/2 cups of water. Cover the bowl and let it sit on the counter until you are ready to bake it the next day.
Preheat your oven to 450 degrees with a Dutch oven inside it for 30 minutes or so while you deal with the dough. It will be a gooey mess, but keep the faith. Flour your board and dump out the dough. You can’t exactly knead it, but with a heavily floured bench scraper, you can herd it into a loaf-like shape. Cover it loosely with plastic wrap and let it sit until the Dutch oven and oven are both good and hot. Plop it into the hot Dutch oven the best you can, put the lid on, and bake it for 30 minutes. Remove the lid and bake another 7-15 minutes. Remove loaf to baking rack and let rest 30 minutes before slicing, if you can stand waiting with that incredible aroma of fresh bread in the house.
At this point, you may be thinking, where are the alleged sandwiches? We want verification that steak sandwiches were actually produced and consumed! You’ll just have to take my word for it. The feeding frenzy that ensued was a testament to the meal’s tastiness, but did not make for pretty photos.
