When the pandemic started, we had Crosby, Stills, Nash, and Young’s So Far in the Triumph’s CD player. A couple times in the last 3 years, we tried listening to something else, but it never took. While it is true that I listened to it a lot in college, this isn’t that. I don’t know why I can’t change the CD, but I can’t. Certainly, I don’t want a return to pandemic days, but something about those family drives kept me hanging on when the world dangled on a tenuous string, and that CD somehow seems a part of what kept me going. In the last few years, we’ve come so far, but not so far that I can let go of our family’s anthem.
We have had marvelous weekend weather for the past month, which means that we have been exploring all the beauty (and bounty in the form of remote eateries with smoked brisket or cheesesteak) on offer in our neck of the woods.

This week, we kept it simple. There is nothing more perfect than a BLT during peak tomato season. Sure, we could get fancy, and add avocado, or egg, or cheese, or salmon. Don’t get me wrong, we love those things, but a good BLT needs no special adornment. Of course, you must teach your children how to make a proper BLT.
Corn Dog Casserole
2 beaten eggs
1 can cream-style corn
1 8-ounce package Jiffy Corn Muffin Mix
1/3 cup oil
1/2 cup milk
1/4 teaspoon salt
4 hot dogs
Cut hot dogs into bite-sized pieces and combine all ingredients. Pour into greased casserole dish and bake at 350º for 35-40 minutes.
