Waffling about what to make for dinner? Why not set up a waffle bar to satisfy all palates! Grandma’s Overnight Yeast Waffles are the perfect base for going savory, sweet, or even (gasp) healthy.
It first came to my attention, on our road trip to Kansas last week, that each family member approaches waffles in a very unique way when they are offered at the Best Western.
Why am I not pictured? I ate scrambled eggs and Fruit Loops instead.
Ben is extremely opinionated about where to stay overnight on a road trip, and as you can imagine, the breakfast offerings make or break a trip for him. He has a very long memory for breakfast delights or transgressions. Due to his insistence, on our way home from Kansas, we stayed at the Holiday Inn Express and Suites. (Which I’m pretty sure is Holiday Inn Express and Sweets when he says it.) “Look, it’s not hard,” Ben advised as we were booking something from the road. “It’s a green square with a white ‘H’. You got this.”
We did as our trip advisor advised, but in the morning, Phil did a quick visual survey and found they didn’t have bacon, and the only thing to drink was coffee. No juice. No water. And… I can not state this strongly enough…there was no bacon.
A good part of my day for my students, for my own family, and for myself is managing expectations, so I went into damage control mode. We extolled the virtues of the conveyer belt pancakes and the (obviously inferior) sausage links.
You can put Ben off (he’s a man of reason) but you can not ultimately deny him anticipated bacon without a fight. A couple days after getting home, we decided on the waffle bar supper, including bacon.

Individual diners may devise their own topping concoctions, but we offered scrambled eggs, chipped beef, blueberries, and syrup. I tried pushing through creamed spinach. Request denied. Bacon was served on the side. We recommend savory OR sweet for each waffle, consuming multiple waffles to accommodate all desires, but we trust you. In the words of Ben, “You got this.”
