When we say it, it sounds more like, “Pork, eh,” and it isn’t a question, but an answer to what’s for dinner every night this week. I guess, when fall arrives, we somehow contract pork butt amnesia. What sounds like a great crockpot idea Sunday sounds a little less great on each successive day, when you’re staring down the leftovers, trying to think of an innovative way to make the most of the bountiful pig. Scheduling conflicts meant that Ben and I couldn’t actually cook together this week, so I’ve been going it alone.
Day 1: BBQ Pulled Pork Sandwiches and Mac and Cheese – everyone’s happy
Day 2: Tamale Skillet Pie – one of Phil’s favorite dishes
Day 3: Leftover Tamale Skillet Pie – it reheats well, but that isn’t the point
Day 4: Pork Burritos – the very dish Ben wanted in the first place, but is missing because of play practice
Day 5: To Be Determined – currently accepting your suggestions
Day 6: Freeze the leftovers – so the next time we get pork butt amnesia, we can have a sane amount to work with and avoid the re-pork-ussions of having a big butt
You think you want pork, eh? ¿Por qué?
